I’ve been struggling this week: I started my new job and got a cold. I guess I was bound to get sick after mixing with hundreds of students for the first time, especially in flu season when I often get cold after cold. I decided to make a yummy, warming stew jam packed with veggies and nutrients, and if your feeling anything like I did give this recipe a try – it made me feel tons better!
- 200g of lentils
- 1 table spoon of olive oil
- 1 onion – finely chopped
- 2 cloves of garlic
- 1 tsp Italian seasoning
- 1/2 tsp paprika
- 1/2 tsp cumin
- 1 tin of chopped tomatoes
- 2 medium carrots – sliced
- 1 medium sweet potato – sliced
- A couple of hands full of sliced butternut squash
- 500ml vegetable stock
Chop and prep all of your veg and bang it in the slow cooker.
Add in your chopped tomatoes and veg stock, followed by your spices, garlic and oil.
Cook on low for a few hours.
Heat your oil up in pan and add in your onions and garlic. Cook for 3 minutes or until browned.
Stir in the seasoning and spices, followed by the lentils, tomatoes, carrots, sweet potatoes, butternut squash and vegetable stock
Bring to the boil, reduce the heat and simmer for around 40 minutes, before serving.
