I made the yummiest banana bread earlier and I just had to share it with you all! I’m definitely one of those people that start the week with the aim of being healthy so I buy loads of fruit, especially bananas. However, by the end of the week they just sit in the fruit basket looking sad. So what better way to use them up than to put them into a cake as a weekend treat?!
60ml milk (I use soy but any milk will work)
1tsp vanilla extract
150g caster sugar
3 rope bananas (mashed)
50g of dark chocolate (chopped) or dark chocolate chips
190g self-raising flour
Pinch of nutmeg
Pinch of cinnamon
Sprinkle of cocoa powder (or more if you want it to be really chocolatey)
Preheat the oven to around 150/160 C.
Melt the butter over a medium heat. Slowly stir in the sugar and add in the vanilla extract.
Add in the mashed bananas and egg and give it a good mix.
Add the flour, milk, cinnamon, nutmeg, cocoa powder and stir again.
Lastly stir in the chocolate chips before poring it into a tin. Bake for around 45 mins to an hour, or until a knife comes out clean. Enjoy!!
