What I ate wednesday

So I’ve seen some YouTubers and bloggers do this before and I thought it would be something fun for me to try out! Please note that although I do try to eat a balanced diet ((and often fail)), I do not claim to be the healthiest eater, especially when I’m trying to juggle uni, assignments and work. Also because of my Wednesdays being crazy with uni I recorded what I ate yesterday and have just edited and uploaded it today because YOLO.

Yesterday was one of my days off ((hallelujah)) and because I normally get up for work at 4.30am I had a lush lie in and a lazy morning in bed. When I finally managed to get up it was so late and I was so hungry that i decided to skip breakfast and just have a large brunch!


11.30am – Brunch


For brunch I made pancakes using a simple American pancake recipe, except I switched the milk for almond milk ((I’m not vegan but I don’t eat much dairy)). I topped these with raspberries, strawberries and blueberries ((my go to for breakfast as i normally use this for porridge or granola too)), lots of maple syrup and some dessicated coconut – yum!! I also had a hazelnut latte with almond milk.

After my yummy brunch I finally got ready for the day, choosing to have a chill makeup free day. I spent the first part of the afternoon studying and reading up on research for my next assignment on the brain’s default mode network and auditory hallucinations ((which sounds dull but is so interesting!)).


After a few hours of studying I was peckish again so I decided to have an afternoon snack.


2.30pm – Afternoon snack

I put my feet up with these yummy cinnamon and raisin bagels ((which I topped with some vegan butter)) and watched the latest episode of the walking dead – I’m obsessed! After this I got back to work and managed to write around 500 words – the most productive I’ve been in a long time! I also managed to get a head start on a few blog posts that will be out over the next couple of weeks, as well as made a start on a new book which I picked up in a charity shop last week called ‘Fifteen dogs’ by Andre Alexis ((not gonna lie, I was mostly drawn to this book because of the amazing cover)).


This book is pretty cool – in it the gods Apollo and Hermes give 15 dogs consciousness in an attempt to see if they would be happier or miserable. Expect this to be in one of my review blogs as I’m loving it already – it’s really philosophical and gets you thinking! By the time I’d read 50 pages I realised how hungry I was and decided to make a start on dinner.


6pm – Dinner


For dinner I made a veggie chilli with Quorn mince, onion, grated carrot, chopped tomatoes, baked beans ((because I absolutely hate kidney beans)) and chilli powder. I must admit this is probably something I cook on a weekly basis, just because it’s so easy to make on a busy day and is so yummy!

After dinner I worked a little more on my essay, before putting it away, curling up by the fire and chilling for the rest of the evening.
